Aunt Winnie’s Peanut Butter Bars

Any time I ever visited my Great Aunt Winnie, there was always a feast.  There is never an empty stomach in her house!  And of course, she always said, “Oh, it’s nothing special… just a little dinner”.  Well, to her, “just a little dinner” usually consisted of one fabulous main course, at least two or three side dishes or salads, a bread, and a few desserts!  Every time I visit her, it’s like a holiday meal, and I love it so!

Aunt Winnie's Peanut Butter Bars This is a excellent bar cookie recipe for any occasion.  There’s a great balance of peanut butter and chocolate, with a little bit of oats for some heartiness.  My great aunt says that you can “frost if desired” but I find that they are delicious just as is.

The Lineup

Mix together the butters and sugars.

After that, add the egg and mix well.

Then, the oats, flour, baking soda, and salt.

Mix that together well.

DoughMix in chocolate chips.

Spread the dough into a pan.

Ready to Bake

Bake until light golden brown, let cool slightly and serve!

Aunt Winnie’s Peanut Butter Bars
A recipe from my great-aunt Winnie

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/3 cup peanut butter
1 egg
1 cup oats (quick or old fashioned)
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips

Preheat oven to 350 degrees F.  Cream together butter, sugars, and peanut butter.  Add egg and mix well.  Add oats, flour, baking soda, and salt; stir.  Mix in chocolate chips.  Batter will be very thick.  Spread in a 13″x9″ pan.  Bake for 20 minutes at 350 degrees F.  Cut into squares before serving.

Makes 12 to 16 servings.

    It’s like peanut butter cookies and chocolate chip cookies mixed into one cookie! :)
