Weekly Menu Plan, June 10 – June 16

I am finally done with traveling for work for a little while!  I am excited to get back into a routine of sorts.  I missed out on making the buffalo chicken last week, and instead I am making teriyaki chicken this week.  We will use it to make “hand rolls” which are a very easy to assemble and portable version of sushi.  The kids will probably just have the chicken, rice, and cucumber (no nori).

For a special summer treat, I am making some iced coffee concentrate, too!  I love having a hot cup of coffee every morning during the winter.  However, during the summer I would rather stay nice and cool.  So, iced coffee it is!

Teriyaki chicken hand rolls
Homemade Pizza
Beef Enchiladas, chips & salsa
Slow Cooked Swiss Steak, Fried Noodles
Frito Chili Pie Wraps
Dinner at our friends’ house
Leftovers/Freezer Meal
