I must confess… It’s starting to get relatively warm here.  And every summer I face the feeling of, “It’s too hot to cook!” way more than I care to admit.  So, last week’s enchiladas and pizza?  I didn’t make them 🙁  I couldn’t bring myself to heat up the kitchen when I feel like the air conditioner already runs every 15 minutes.

This week, I am trying to think of meals that I can make which don’t require turning on the oven.  Plus, I am far behind on my recipe posts.  My camera card is overflowing with pictures of food that I need to share with you all.  It’s been a bit busy for me lately, but I hope to be able to carve out some time to work on a few new recipe posts soon!
