I am glad that I didn’t plan too much as far as last week went… I ended up not making the lo mein which I planned to make and had leftovers instead.  And, my “surprise meals” included dinner out, and a variation of these chicken enchiladas.  All of the traveling (both to my home town and to Newark, NJ!) ended up wearing me out more than I had planned.  Sometimes it’s good to give yourself a little grace!

This week, I am traveling for work (again).  It’s the last time I’m traveling for a little while, and I still have plenty of food in the freezer for my family while I’m gone for one dinner.  My husband wants a “big salad” sometime this week, so we’ll have “crack salad” (a.k.a Walnut, Cranberry, & Blue Cheese Salad) if I can find some reasonably priced blue cheese this week at the store.
