S’more Cookie Bars

While these S’more Cookie Bars are not near as fun to make as a traditional s’more made over a campfire, they taste just as great!  Plus, even though they are still gooey with marshmallows and chocolate, they are much easier to eat in a bar cookie form.  If you love all things s’more (like we do!), you’re in for a treat!

Here’s what you need…

What You Need

In a large bowl, cream together the butter and sugars until light and fluffy.

Beat in egg and vanilla.

Add flour, graham cracker crumbs, baking powder, and salt to butter mixture.  Mix on low speed until just combined.  I like to finish off cookie doughs by hand, just to make sure they don’t get overmixed.

Divide dough in half.  Press half of the dough into bottom of the prepared pan.

Place the chocolate bars over dough.  Alternatively, use chocolate chips and layer no more than 1/4″ thick.

Spread the marshmallow creme over the chocolate.  While you’re at it, spread a little bit on a whole graham cracker and make a little sandwich.  Thank me later ;)

Place the remaining dough on top of the creme, and press it down lightly.

Bake, and then cool completely before cutting into bars.

S’more Cookie Bars
From your Everyday Home Cook

1/2 cup butter, softened
1/4 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/3 cup flour
3/4 cup graham cracker crumbs (about 7 whole crackers)
1 teaspoon baking powder
1/4 teaspoon salt
4 milk chocolate candy bars
1 7 oz container marshmallow creme

Preheat oven to 350 degrees F.  Grease an 8″ square baking pan.  In a large bowl, cream together butter and sugars until light and fluffy.  Beat in egg and vanilla.  Add flour, graham cracker crumbs, baking powder, and salt to butter mixture.  Mix on low speed until combined.  Divide dough in half.  Press half of dough into bottom of prepared pan.  Place chocolate bars over dough.  Alternatively, use chocolate chips and layer no more than 1/4″ thick.  Spread marshmallow creme over chocolate.  Place remaining dough on top of creme.  Bake 30-35 minutes.  Cool completely before cutting into bars.

Makes 9 to 12 cookie bars
