I survived!  The last two weeks have been really busy and stressful, and I made it.  I did some serious “food therapy” sessions this weekend, canning and freezing things from our garden.  Some people paint, others meditate… I cook.  And bake.  And can. 😉

It’s an “eat from the pantry/freezer week” here, as I’m trying to make sure we eat what we have on hand in a timely manner.  I did not get to the tamale pie (again!!) or the sausage skillet, as we had lots of leftover food from a couple of events for work.  So, we ended up eating a lot more leftovers than I had planned.

Bean & Cheese Burritos, corn, chips & salsa
Cheesy Beans & Rice, tortilla chips
Fried Egg Sandwiches, peas
Minestrone, breadsticks (from the freezer)
Fried Rice
Dinner at Church
