I first made this cake one year when my family was visiting around my Dad’s birthday.  This was his “birthday cake”!  Ever since, my son has called it “the cake that we had for Grandpa’s birthday” 🙂  Regardless of the occasion, it is an excellent cake to share with family and friends.  Your kitchen will smell like fall while it bakes in the oven!  Not only is it a delicious dessert, it isn’t overly sweet and I wouldn’t blame you if you had a slice for breakfast… In fact, I’d probably join you!

Here is what you need…

In a large mixing bowl, combine the eggs and the 2 cups of sugar.

Add the oil, orange juice, and vanilla extract and mix well.

Combine the flour, baking powder, and salt.  Gradually mix this into the egg mixture.  Beat until smooth.

In a small bowl, combine 3 tablespoons sugar and cinnamon.  Sprinkle over apples, and stir.

Pour half of the cake batter in the prepared pan.

Arrange half of the cinnamon apples on top.

Pour remaining batter over the apples, and then top with remaining apples.

Bake until done… Test for doneness by inserting a toothpick near the center of the cake.  If the toothpick comes out clean, the cake is done. It will get much taller in the oven!

Cool the cake for 1 hour in the pan before removing to cool on a wire rack.

Store any extra cake tightly wrapped at room temperature.

Ingredients
  

  • 4 eggs
  • 2 cups white sugar
  • 1 cup vegetable or canola oil
  • 1/2 cup orange juice
  • 2 1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 4 cups thinly sliced apples
  • 3 tablespoons white sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Grease and flour a tube pan, and set aside. Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine eggs and 2 cups sugar. Add oil, orange juice, and vanilla extract and mix well. Combine flour, baking powder, and salt. Gradually mix into egg mixture. Beat until smooth.
  • In a small bowl, combine 3 tablespoons sugar and cinnamon. Sprinkle over apples, and stir.
  • Pour half of the cake batter in the prepared pan. Arrange half of the cinnamon apples on top. Pour remaining batter over the apples, and then top with remaining apples.
  • Bake in preheated 350 degree F oven for 1 hour 10 minutes to 1 hour 20 minutes. Test for doneness by inserting a toothpick near the center of the cake. If the toothpick comes out clean, the cake is done.
  • Cool 1 hour in pan before removing to cool on a wire rack. Store tightly wrapped at room temperature.
