Weekly Menu Plan, Jan 25 – Feb 1

2014 January 26
by Alicia

Are you surprised that I only made one of the new recipes from last week?  I’m starting to think maybe I should call these weekly menu “suggestions” :) We weren’t feeling the soup, so I made shrimp lo mein instead.  We also ended up going out to eat for a friend’s 30th birthday, so I made macaroni and cheese for the kids and the babysitter instead of the taco bowls, because I wanted to make sure it would be something they knew they liked.

I am going to try a new chicken dish this week, but basically not really make it like it says to at all: I am not a huge fan of making things in foil unless necessary, I’ll use the veggies we already have, and I’ll cook regular rice.  And the sriracha will only go on me & my husband’s portions :)  For the kielbasa dish, I will be using dried spaetzle instead of making it as the recipe suggests.

Dinners
Honey Sriracha Chicken (new recipe to us), rice, steamed veggies
Spaetzle with Kielbasa and Caramelized Onions (new recipe to us)
Black Bean and Cheese Taquitos, corn
Homemade Pizza
Garlic/Lemon Chicken (new recipe to us), No Knead Bread
Ham & Cheese pockets (from the freezer)
Swedish Meatballs

What’s on your menu plan this week?

Your Swedish meatball recipe (along with your recipe for frozen meatballs) has become a favorite recipe for me. Putting it together is easy, quick, & best of all requires No Thinking. I’m going to try the spaetzle recipe this week as I have some of the dried in the cupboard.

I love your blog & have quickly become reliant on it. After 50 years, I’m tired of thinking about what to have for dinner, so I come to see what you’re having. Thank you

I am so glad that you find the menu plans useful! My two kids love the Swedish meatball recipe, too. They ask for “meatballs with gravy and noodles” quite often :) I haven’t tried the spaetzle recipe yet this week, but I think I’ll be able to make it near the end of the week.
