Italian Sausage Soup has a delicious, savory flavor that is sure to warm your home on any chilly day!  You can also make this soup in the slow cooker, which is great if you have got some time to cook, but you’re not ready to eat just yet.

Start by browning the Italian sausage.  If you have links, remove the casings before cooking and crumble them up.

Scoop out the sausage from the pan and leave about 1 tablespoon of grease in the pan.  There will be lots of wonderful brown bits stuck to the bottom of the pan, too, and you’ll scrape them up in a bit.

Add the onion to the pan and cook until the onions are translucent, and a bit golden in color.  Add the garlic and cook a few more minutes.

Pour in the wine, and scrape up the browned bits from the bottom of the pan.

Then, add the sausage back to the pan along with the tomatoes, bell pepper, broth, and spices.

Simmer on low for 30 minutes, or cook on low in a slow cooker for 4 hours.

If cooking on the stovetop, turn up the heat, add about 2 cups of water, and add the pasta to the boiling broth.  Cook until the pasta is done.  If cooking in the slow cooker, cook pasta on the stovetop according to package directions, and add to the soup once cooked.

Ingredients
  

  • 1/2 to 3/4 pound Italian sausage hot, mild, or sweet
  • 2 cloves garlic minced
  • 1/2 medium onion chopped
  • 3/4 cup red wine
  • 1/2 bell pepper chopped
  • 1 15- oz can diced tomatoes undrained
  • 2 1/2 cups beef broth
  • 2 tablespoons fresh parsley chopped (or 1 teaspoon dried)
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 2 cups short-cut pasta such as shells, elbow macaroni, etc.

Instructions
