I am back after a menu planning hiatus. Let me tell you, it was pretty miserable! Not having a solid plan for what meals to make during the week was no fun. I spent the last few weeks in “survival mode” trying to get through a project for one of my graduate school classes– I spent just about every free minute on my computer running code and trying to work out the kinks. I made very simple meals and many nights we just ate what we had on hand rather than me fixing a new meal. I think we are full of sandwiches for awhile 🙂
