Cake Batter Cereal Treats

2012 April 5
by Alicia

Looking for a way to mix up your regular cereal treats?  There are so many possibilities for cereal treats, such as one of my favorites, peanut butter!  I found this recipe for a twist on these traditional treats on Pinterest, and thought it looked like a way to make them even more exciting than usual.  It would be super easy to make this fit the season with some festive sprinkles, too!   Who doesn’t love these kid-friendly squares?!

Weekly Menu Plan, Apr 1 – Apr 7

Last week, I tried two recipes that were new to us.  One (Chili Cheese Dog Casserole) I think I will make again with some adjustments, and the other (Easy Garlic Chicken) needed a total overhaul in our opinion, so I won’t be making it again.

Since the casserole didn’t quite hit the “chili cheese dog”-spot for my husband, he requested that I make the real deal this week.  So we’ll have hot dogs on buns with chili and cheese one night.  My husband also requested Honeymoon Pizza, and I have a very hard time turning down that request, as it’s one of my favorite meals!  His final request for the week while I was planning is that I make Vanilla Scones again sometime soon.  I will probably make those after I can get to the store, as I need more whole wheat flour (I usually sub half).

Dinners
Corn Tortilla Chicken Lasagna (new recipe to us)
Chili Cheese Dogs
Honeymoon Pizza

Chicken Alfredo with steamed broccoli
Chicken & White Bean Enchiladas (new recipe to us, and I doubt I’ll use the “low fat” suggestions ;) )
Leftovers/Freezer meal/Dinner out (x2, leaving some room for flexibility!)

by Alicia

I love finding recipes that are simple to put together and taste great.  I recently tried this recipe as part of a menu plan, and since my family loved it, I will be making it time and time again!  I can see a lot of possibilities with this recipe, and there is so much room to make to suit your families tastes.  Tostadas are so fun to make and eat!

Weekly Menu Plan, Mar 25 – Mar 31

2012 March 26
by Alicia

It’s going to be another busy week!  Lately, chicken has been on sale around these parts, so we are having several chicken dishes.  I roasted a few large chicken breasts over the weekend.  I split them up into portions to freeze (about 1 lb each) that I can thaw in the future to have cooked chicken in a hurry.  It’s so simple, and helps me save so much time.  I’ll probably use one package for the pizza, and if there is some leftover, I’ll make chicken quesadillas for a lunch.

Dinners
Grilled Brats
Buffalo Chicken Legs (roasted in the oven instead of fried)
BBQ Chicken Pizza
Slow-Cooker Chicken Tostadas
Easy Garlic Chicken (new recipe to us)
Chili Cheese Dog Casserole (new recipe to us)
Leftovers/Freezer meal/Dinner out (leaving some room for flexibility!)

Simple Blackberry Crisp

2012 March 23
by Alicia

I should start this post by saying that my husband would like to name this dish, “Mouthwatering Blackberry Crisp”.  He says that the smell of it baking in the oven makes your mouth water, and I have to admit that I agree!  But, as you know, around here I like to keep things simple.  Thus, I’m sticking with the adjective “simple”.

Simple Blackberry Crisp is a excellent choice for a refreshing dessert.  It can be made with any berry that’s in season, or even with frozen fruit.  A mix of blackberries, raspberries, and blueberries is especially delicious!  Another plus of this recipe is that you can make it ahead, and bake it when you’re ready to serve.  A scoop of vanilla bean ice cream is a perfect addition when serving this for dessert.
