I don’t make many lasagnas. In fact, I think this is the only recipe I’ve ever made. It began with a recipe which my sister found on the internet, and I have tweaked it to our liking. I started by making it smaller, as the original recipe made a 13″ x 9″ pan full, which was way too much for my husband and me. This recipe will fit in an 8″ x 8″ pan, which makes enough for us plus leftovers (which are delicious!). There is no extra step of boiling the noodles which is quite convenient. It’s actually quite a versatile recipe, as you can modify the ingredients to what you have on hand.
This is one of my husband’s favorite soups. I like that it is easy to make, yet it is still tasty. One of my favorite ways to stay warm on a snowy day is with a hot bowl of hearty soup. This definitely fits the bill! If you like chunky potato soup with more than just potatoes, you will enjoy this recipe.
I have an 11-month old son, and he loves to eat! One way I have found to save money in our food budget is to make his baby food myself. It’s not hard to do, but it does take a little planning and time. In crunching the numbers, I’ve found that it cuts the cost anywhere from 1/2 to 2/3 (depending on what type of food it is) by making baby food at home, rather than purchasing ready-to-serve containers. It’s just one way we’ve found to live a little simpler, and hopefully a little healthier.
Here’s a great inaugural baking post… Brownie Biscotti! They have a nice, chocolaty flavor that’s not overwhelming. They remind me of both brownies and the chocolate cookie part of Oreos… I believe they would make an excellent addition to your Christmas cookie list! Never to early to start thinking about this year’s repertoire…

Occasionally, I’ll get a bug to make something which requires extra work or an ingredient which requires a special trip to the grocery store.
