Whole Wheat Strawberry Shortcake

Strawberry Shortcake has to be one of my favorite summertime desserts.  The fresh, sweet strawberries atop a tender shortcake with a large dollop of whipped cream seems to scream “Summer is here!”  Every year, I can’t wait for strawberries to be in season so that I can make this easy, fresh dessert to share with family and friends.

PW’s Vanilla Scones

The other day I wanted to try something a little different than my usual scones.  I can’t say that I’ve ever had any real vanilla beans on hand (I know, I’m missing out!), so I adapted a recipe from The Pioneer Woman, a.k.a. PW.  These Vanilla Scones are delicious, whether you have real vanilla beans or not!

Maple Whole Wheat Scones

Scones!  These Maple Whole Wheat Scones are tender and slightly sweet… perfect for breakfast or brunch!  I am a maple syrup lover, but the maple flavor of these scones is subtle.  If you leave off the glaze, you might not even notice the maple flavor at all.  To me, the flavor of the scone itself is reminiscent of graham crackers.  Epicurious calls them “Maple Tea Scones”, and I do think they would go quite nicely with a hot cup of tea.  A Saturday morning treat!
