Simple Teriyaki Chicken

Simple Teriyaki Chicken is so easy and quick, it’s barely even a recipe!  However, I wanted to share this super simple way to prepare chicken with you all.  We love to eat it over rice, but it would also be excellent on a salad or even in sushi!  The chicken cooks in less than 15 minutes, and with the use of a sheet of foil, cleanup is a breeze.

Salt & Pepper Chicken

Salt & Pepper Chicken is yet another dish that I had to learn how to make after working at an Asian/Fusion restaurant in college. It flavorful and crispy, and very juicy as it is made with marinated dark meat chicken.  While this was not one of the menu items at the restaurant, our chef, “Ma”, would make it for the staff because she knew how much we enjoyed it.  After much searching online for a recipe, I finally found one that I was able to modify to taste about as close to Ma’s recipe as I think I’m going to get.  If you enjoy bold flavors, I think you will love Salt & Pepper Chicken.

Shrimp Lo Mein, Chicken Lo Mein, Beef Lo Mein, Vegetable Lo Mein… Whatever you like, you can customize this recipe to fit your tastes or to fit what you have in your kitchen.  Adaptability is something that I love in a recipe, because sometimes I just forget what I have on hand.  This Lo Mein recipe is a great place to start, and you can add in your own choice of protein and vegetables.  As you all know, I’m a big fan of creating your favorite takeout dinners at home!

Orange Cashew Chicken

I love cashews.  I also love mandarin oranges.  And chicken.  Combine those with a sauce that’s a little salty and a little sweet, and you’ve got a winning dish that comes together in about 30 minutes or less.  We love to eat this for dinner in our house… My husband even claims that it is “Better than takeout!”, so I hope your family enjoys it, too.

Sweet & Sour Chicken

I have come to love recipes that can be made in the slow cooker.  I love being able to throw everything together in the morning and come home in the evening to a meal that’s ready to go!  Some meals, such as this one, don’t require quite as long to cook.  If the recipe only needs to cook 4 or 6 hours, I mix it up and ask my husband to put it in the slow cooker and turn it on at lunch! Sweet & Sour Chicken is an excellent addition to your list of slow-cooked dinners!

Alicia’s Awesome Crab Rangoon

I invented this recipe many years ago… when I was in high school.  I loved eating crab rangoon at Asian restaurants, and of course there were none of those in my hometown of under 1,000.  Like a lot of recipes I come up with, this one was invented out of necessity.  And it was awesome.  Thus, I christened it:  Alicia’s Awesome Crab Rangoon.  I’ve matured (slightly) since then, so I considered re-naming them, but the fact of the matter remains…  they’re still awesome.

Spicy Green Beans

I’ve mentioned a couple times before that I worked in a superior Asian/Fusion restaurant in college.  Every dish I ate there was delectable, and Spicy Green Beans was yet another dish I had to learn how to make at home.  This dish is incredible as is, but is very adaptable to your taste.  Want to make it a main dish?  Add some protein, such as chicken or shrimp, to make it a more hearty main dish.  My husband happens to love this dish with strips of crispy tofu.  This is a great dish for summer, when green beans are at their peak.  It’s also perfect because you don’t have to use the oven and heat up the kitchen.
