One of my favorite things about Thanksgiving Turkey is leftovers! You can add the turkey to lots of dishes where you would normally use chicken. These Green Chile Turkey & Rice Bowls are a fun way to help you eat leftovers without having to eat another turkey sandwich!
I have come to love recipes that can be made in the slow cooker. I love being able to throw everything together in the morning and come home in the evening to a meal that’s ready to go! Some meals, such as this one, don’t require quite as long to cook. If the recipe only needs to cook 4 or 6 hours, I mix it up and ask my husband to put it in the slow cooker and turn it on at lunch! Sweet & Sour Chicken is an excellent addition to your list of slow-cooked dinners!
Sausage Rice is so simple to throw together. It is a one-skillet meal that comes together in about 30 minutes, so it is perfect for a quick weeknight meal. If you want the dish to come together even quicker, you can use quick cooking rice. It is easily customizable; you can add a little kick with some pepper flakes or just use a spicy sausage. Plus, if you can find sausage on sale (sometimes the rolls of sausage are less than $1/lb here!) it is also economical! At four ingredients and about 30 minutes to the table, you can’t lose!
Whenever we have a lot over leftover white rice, I like to put Chicken Fried Rice on the menu. This recipe also works with chicken, pork, shrimp, or even without protein and as veggie fried rice. It’s a filling dish that allows you to use just about whatever you want or have on hand.
Cheesy Beans & Rice has become one of our family’s favorite quick dishes. It would make a great side, but has enough flavor and substance to stand on its own as a main dish. Personally, I love to eat the beans & rice with tortilla chips! Another great thing about this recipe is that you can put it together and refrigerate it to bake later. Simple and delicious!
Simple Jambalaya is a great, quick, weeknight meal. I’ve never had genuine jambalaya, so I cannot attest to the authenticity. What I do know, however, is that it’s full of flavor and sure to please your family!
