Grandma Carol’s Chili

First of all, Happy Birthday to my little sister!  We love you lots and hope your day has been amazing 🙂

On a cold winter’s day, there’s not much like a pot of chili simmering away for dinner.  Add a side of corn bread, and you’ve got a meal!  It’s an easy soup to toss together, and the longer it cooks, the better it tastes.

Sweet & Sour Chicken

I have come to love recipes that can be made in the slow cooker.  I love being able to throw everything together in the morning and come home in the evening to a meal that’s ready to go!  Some meals, such as this one, don’t require quite as long to cook.  If the recipe only needs to cook 4 or 6 hours, I mix it up and ask my husband to put it in the slow cooker and turn it on at lunch! Sweet & Sour Chicken is an excellent addition to your list of slow-cooked dinners!

“Get Fat” Spinach & Artichoke Dip

You may laugh at the name of this dip, but it’s so fitting.  Well, I guess I shouldn’t say “fitting”, because your clothes won’t if you eat a bunch of this dip… 😉  All joking aside, while this may not be the healthiest dip, it sure is one of the tastiest!  Since you can make it in the crock pot, it is a great dip for parties, as you can stir it up and pretty much forget about it for a few hours.  It is delicious with toasted bread, crackers, tortilla chips, veggies… You name it.  Just be sure that you have plenty of people to share it with, or you will start to “get fat” as the name suggests!

Slow-Cooker Chicken Tostadas

I love finding recipes that are simple to put together and taste great.  I recently tried this Slow-Cooker Chicken Tostada recipe as part of a menu plan, and since my family loved it, I will be making it time and time again!  I can see a lot of possibilities with this recipe, and there is so much room to make to suit your families tastes.  Tostadas are so fun to make and eat!

Taco Soup

Taco Soup is one of those recipes that is so simple, yet tastes so yummy!  This soup is great for a cold, blustery day, when all you want to do is wrap up in a blanket and eat a big bowl of a hearty soup.  And, it’s simplicity makes it a perfect weeknight meal.  Brown some ground beef with onions, open some packets and some cans, heat it all up, and “ta-da!”  Dinner is ready!

Slow Cooked Pot Roast

Growing up, my sister and I had any choice we wanted for our “birthday meal” on the day we celebrated our birthday.  It was always the same thing… homemade fried chicken, mashed potatoes & gravy, corn, and some variation of a jello salad.  We only ate homemade fried chicken twice a year.  Why do I bring this up in a post about slow cooked pot roast?

Because this meal, my friends, was my second choice.  If for some reason chicken was not able to be on the table, I would have chosen pot roast, potatoes & carrots, fried noodles, and gravy.  Although I never had to have my “second choice” as a meal, I seriously considered changing it up several times.  But, I always came to the conclusion that we had pot roast more than twice a year, and if I were to choose it, we’d only have fried chicken once!
