Extra Pie Crust?

Got extra dough leftover from making your favorite pie crust recipe?  Here’s a couple of ideas for how to use up the extras!

The first idea is to press the dough into mini-muffin tins and add your favorite fillings.

In these “tartlets” as I call them, I have jam, Nutella, and lime curd (from left to right).  I like to roll out the dough as I normally would, then use a small biscuit cutter to get a perfect circle to press into the mini-muffin tin.  Fill with your favorite filling, then bake at 400 degrees F for about 10 minutes or so.  Keep an eye on them in case they are done sooner.

Secondly, if you don’t have much dough leftover, you can place it on a baking sheet and brush with butter.  Sprinkle with cinnamon and sugar, and then bake.

Like the “cinnamon sugar bear” above?  He’s always nearby at our house for cinnamon toast!

These bits are probably my favorite way to enjoy extra pie crust.  Just look at those flaky layers!
