Aunt Winnie’s Peanut Butter Bars

Any time I ever visited my Great Aunt Winnie, there was always a feast.  There is never an empty stomach in her house!  And of course, she always said, “Oh, it’s nothing special… just a little dinner”.  Well, to her, “just a little dinner” usually consisted of one fabulous main course, at least two or three side dishes or salads, a bread, and a few desserts!  Every time I visit her, it’s like a holiday meal, and I love it so!

This is an excellent bar cookie recipe for any occasion.  There’s a great balance of peanut butter and chocolate, with a little bit of oats for some heartiness.  My great aunt says that you can “frost if desired” but I find that these Peanut Butter Bars are delicious just as is.

Mix together the butters and sugars.

After that, add the egg and mix well.

Then, the oats, flour, baking soda, and salt.

Mix that together well.

Mix in chocolate chips.

Spread the dough into a pan.

Bake until light golden brown, let cool slightly and serve!
