Fudgy Brownie Bites

Why not a recipe for Fudgy Brownies, you say?  Because these bites are so chocolaty and so rich, all you need is a bite!  The original recipe makes a round torte, which is cut into wedges.  But trust me… all you need is a bite!

The first thing to do is round up all of your ingredients.  Anytime you are baking or cooking, it never hurts to make sure you have everything you need before you start putting together the recipe.  I would hate for you to have to run out the the store for more of an ingredient!  Pretend that you see an 1/4 cup of heavy cream in the photo below.  I accidentally left it in the refrigerator for this picture!

Melt one stick of butter with a cup of chocolate chips, and the cocoa powder over low heat.  After that’s all melted, stir in the sugar, vanilla and salt.  Let it cool a bit before you add the eggs.

Mix both eggs in at the same time, and make sure it’s well combined.

Add the flour and stir just until blended.  Pour into a greased baking dish.

Bake until a toothpick inserted near the center comes out almost clean.  Cool for a bit before cutting into bite-sized pieces.  I like to use a pizza cutter to make this task go quickly!

To make the ganache, heat the cream.  Generally, I use the microwave for less than a minute.  Add the remaining butter and chocolate and give it a good stir.  You can “frost” the bites like you would a cake, or you can put the ganache in a small plastic bag, snip off a tiny bit of the corner, and drizzle it over the bites.

Refrigerate the bites for awhile before serving!

Fudgy Brownie Bites

1/2 cup + 2 teaspoons butter
1 1/2 cups semisweet chocolate chips, divided
2 tablespoons unsweetened cocoa powder
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 large eggs
1 cup all-purpose flour
1/4 cup heavy cream

Preheat oven to 35o degrees F.  In a 2 or 3 quart saucepan, melt 1/2 cup butter, 1 cup chocolate chips, and cocoa powder over low heat.  Remove from heat and stir in sugar, vanilla, and salt.  After cooled slightly, stir in eggs until well mixed.  Add flour and stir just until blended.  Grease an 8″x11″ baking dish.  Pour batter into dish, and bake at 350 degrees F for 15 to 20 minutes, or until a toothpick inserted near the center comes out almost clean.  Let cool 15 minutes.  Warm cream and add remaining 2 teaspoons butter, and 1/2 cup chocolate chips.  Stir vigorously until the chocolate and butter are melted.  Drizzle over bites.  Refrigerate at least 1 hour before serving.  Store in the refrigerator.

Makes about 4 dozen.
