Last week’s menu was very successful! It was so nice to have a list of dinners at the ready, so when the time came to start cooking, I could begin right away without having to think about what I had on hand, or having to make a last-minute trip to the grocery store, in order to put a nice dinner on the table. I also ended up making a couple breakfasts, Oat Pancakes and Oven-Baked Caramel French Toast, over the weekend last week… Yum!
I had the flexibility to make the dishes at some point during the week, without having to stick to a regimented, “we’ll eat this on that day”-type of plan. So, again this week, I’m going to list what we will have at some point during this week for dinner.
I have quite a few meals at the ready in my freezer, and my freezer is getting full! So, we will be eating at least one meal from the freezer for dinner this week.

January 2, 2012 at 4:46 pmMmm… If I weren’t in land-locked Kansas, I would say fish sounded great too! It’s expensive to get good fish around here.
Plus, we just got a sizeable amount of beef as part of our Christmas gifts 🙂
