Weekly Menu Plan, June 24 – June 30

There is about 6 weeks for us left here at the current home of Everyday Home Cook.  We have accepted an offer on our house, and are currently looking for our next home!  I’m so excited to move on to the next chapter of our lives, but at the same time, it’s a little sad.  Bittersweet is the word, I guess.  I know that it will probably be a LONG time before I have another kitchen as beautiful and wonderful as this one!  I have absolutely loved cooking here.  However, I know there are bigger and better things in store for our family!

That means that we only have about 6 more weeks to eat all of the food in the house, or we’ll have to move it.  I didn’t realize how much food we have on hand until I started to think about packing up my kitchen… So, I am debating on trying to steadily “eat down” our food throughout the rest of our time here, or just leave it all for the last couple weeks.  I think I will keep most of it around for the last few weeks, as we will be so busy packing and be so excited to see what’s next for our family, that I won’t be very focused on the answer to the question, “What’s for dinner?”

This coming weekend, we are excited to celebrate the wedding of my mother-in-law to her fiance (my future father-in-law!).  We’ll be on the road a bit, so I won’t be cooking those days.  Also, we ended up with lots of leftovers from last week, as my mom came to town (ordered takeout!) and we were invited to our pastor’s house for dinner, so that’s how we’ll begin this week’s menu plan!  With most days this week being forecast over 90 degrees, I aim to only turn on my oven twice (cookies, and baked french toast!).

Dinners
Beef , Black Bean, & Cheese Burritos, tortilla chips & salsa
Slow Cooked Barbecue Beef (new recipe to us), potato chips
Slow Cooker Mexican Lasagna (I may sub in ground beef if I don’t get to the store; new recipe to us)
Leftovers/Freezer meal (x2)
Dinner at family’s house (x2)

Snacks/Treats/Other
White Chocolate & Cranberry Oatmeal Cookies, Oatmeal Scotchies (same dough!)
Oven-Baked Caramel French Toast (using some leftover french bread)
