Cheesecake Chocolate Chip Cookie Bars

Chocolate chip cookies meet cheesecake in these sweet, yummy bars.  Of course, if you’re in the mood for either just chocolate chip cookies, chewy chocolate chip bars or cheesecake, I’ve got you covered there too!

Here’s what you need for the cookie layers:

In a large mixing bowl, beat together butter, shortening and sugars until light and fluffy.

Add egg, vanilla extract, and vinegar; mix well.

Mix in baking soda, salt, and flour, just until blended. I stop when there’s still a little flour left since I’ll be mixing in the chocolate chips.

Stir in the chocolate chips by hand, and resist the urge to grab a huge spoonful of dough…

Now set that far out of reach for a few minutes!

Here’s what you need for the cheesecake filling.  Sidenote… Don’t you love that mint green egg?  My boss has Ameraucanas, and generously shares with us from time to time!

To make cheesecake filling, beat together cream cheese and sugar until well combined.

Add egg (love the orange-y farm-fresh yolks!) and vanilla; beat until completely mixed.

In the prepared pan, spread half of the cookie dough.

Pour cheesecake filling on top and spread evenly.

With clean hands, take small amounts of the remaining cookie dough and flatten, placing them on top of the cheesecake filling.

Bake until golden brown and filling is set.

Cool completely before storing in the refrigerator.  And you have to store them there if you don’t want them to disappear immediately… Out of sight, out of mind, right? 😉

Ingredients

Cookie Layers

  • 1/2 cup butter at room temperature
  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup chocolate chips

Cheesecake Filling

  • 1 8 oz package cream cheese at room temperature
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  • Grease a 9"x13" pan and set aside.  Preheat oven to 350 degrees F.
  • In a large mixing bowl, beat together butter, shortening and sugars until light and fluffy.  Add egg, vanilla extract, and vinegar; mix well.  Mix in baking soda, salt, and flour, just until blended.  Stir in chocolate chips.
  • To make cheesecake filling, beat together cream cheese and sugar until well combined.  Add egg and vanilla; beat until completely mixed.
  • In the prepared pan, spread half of the cookie dough.  Pour cheesecake filling on top and spread evenly.  With clean hands, take small amounts of the remaining cookie dough and flatten, placing them on top of the cheesecake filling.
  • Bake in preheated 350 degree F oven for 35 to 45 minutes, until golden brown and filling is set.  Cool completely before storing in the refrigerator.
