Weekly Menu Plan, March 1 – March 7

I am seeing some spring-like days in the weather forecast… Thank goodness.  I am ready for sunshine, green grass, and flowers!  Even though our winter wasn’t terribly snowy or super cold here, I am still ready for the change in weather that makes living in Kansas so interesting!

Dinners
Roasted chicken, mashed potatoes, roasted carrots, sweet potato biscuits
Beef & cheese enchiladas (with this sauce), mixed vegetables
Spaghetti, garlic bread, peas
Ham, cheesy corn, spinach salad
Louisiana Cajun Shrimp, couscous
Dad’s choice (while I’m in class)
Leftovers or dinner out
