I love fall.  One of my favorite things about fall is the abundance of apples!  This is the first of two simple apple cakes that I plan to share with you all this season.  I hope that you’ll love it as much as our family does. Tart apples with a little spice and a subtle maple glaze… The giant pan never lasts more than a couple of days!

Apple Squares with Maple

Here is what you need…

In a mixing bowl, combine the eggs and the salt until frothy.

Add the sugar, oil, and vanilla and mix until blended.

Stir in the flour, baking soda, cinnamon, and nutmeg just until blended.

And then gently fold in the apples by hand.

Pour the batter into the prepared pan.

Bake until the cake light golden brown.  Let it cool.  While the cake is cooling, mix together the ingredients for the glaze.  Add the milk a little at a time to achieve the desired drizzling consistency.

Drizzle the glaze over the cooled cake. Cut into squares.

Servings 24 to 36 squares

Ingredients
  

Apple Squares

  • 3 eggs
  • 1/4 teaspoon salt
  • 1 1/2 cups white sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour substitute up to 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 cups chopped apples unpeeled (peel if desired)

Maple Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons whole milk
  • 1 tablespoon pure maple syrup

Instructions
 

  • Grease and flour a 15"x10" pan and set aside. Preheat oven to 350 degrees F.
  • In a mixing bowl, combine the eggs and salt until frothy. Add the sugar, oil, and vanilla and mix until blended. Stir in the flour, baking soda, cinnamon, and nutmeg just until blended. Gently fold in the apples by hand. Pour batter into prepared pan.
  • Bake for 30 minutes, until light golden brown. Let cool.
  • While cake is cooling, mix together ingredients for glaze. Add milk a little at a time to achieve the desired consistency. Drizzle over cooled cake. Cut into squares.
