2cupsall-purpose floursubstitute up to 1 cup whole wheat flour
1teaspoonbaking soda
1teaspoonground cinnamon
1/4teaspoonground nutmeg
3cupschopped applesunpeeled (peel if desired)
Maple Glaze
1cuppowdered sugar
2-3tablespoonswhole milk
1tablespoonpure maple syrup
Instructions
Grease and flour a 15"x10" pan and set aside. Preheat oven to 350 degrees F.
In a mixing bowl, combine the eggs and salt until frothy. Add the sugar, oil, and vanilla and mix until blended. Stir in the flour, baking soda, cinnamon, and nutmeg just until blended. Gently fold in the apples by hand. Pour batter into prepared pan.
Bake for 30 minutes, until light golden brown. Let cool.
While cake is cooling, mix together ingredients for glaze. Add milk a little at a time to achieve the desired consistency. Drizzle over cooled cake. Cut into squares.
