Looking for a quick, weeknight dinner that you can have on the table in less than 15 minutes?  If you want to avoid heating up something from the frozen foods section of the grocery store, making a trip through a drive-through, or ordering take-out, Black Bean Tacos are here to save you!  They are so simple and quick to make, but you don’t have to compromise flavor!

Black Bean Tacos

What You Need

Mix together the beans, corn, and salsa in a big, microwaveable bowl.  If you are using canned tomatoes (as I am here), feel free to toss them in from the get go.  Heat on high for 2 minutes, and then stir.  Heat another 2 minutes.

Stir again, and add fresh tomatoes and cilantro.  Stir one last time.  Serve with extra cilantro and cheese on the side, if you wish.  You could also add lettuce.

Isn’t that so simple?  It’s a great base recipe that you can adapt to make your own.  For example, if you want to spice it up a bit, add some minced jalapenos.  Not big on tomatoes?  Leave them out.  Comment if you’ve made a variation that turned out to be a hit in your household!

Black Bean Tacos

1 15 oz can black beans, drained and rinsed (about 2 cups cooked)
1 cup frozen corn
1/2 cup chunky salsa
1 fresh tomato, diced, or 1/2 can diced tomatoes (drained)
1/4 cup fresh cilantro, chopped
tortillas
cheese, if desired

Combine all except cheese and cilantro in a large, microwaveable bowl.  Microwave on high for 2 minutes.  Stir well.  Microwave another 2 minutes.  Stir again.  Add tomatoes and cilantro, stir, and serve immediately with tortillas and cheese.

Makes 4 to 6 servings.
