Taquitos are a fun food for appetizers, or even a main dish.  They are great for the whole family, and perfect finger food for dipping in a side of salsa or cheese dip.  This simple recipe is also freezer friendly.  So, whip up a double batch and throw half in the freezer for a quick meal in the future!

Beef, Bean, & Cheese Taquitos

Start by gathering together your ingredients.  You will need cooked ground beef, refried beans, shredded cheese, and corn tortillas.  I like to season the ground beef with about half of a recipe of my taco seasoning.  You could use a whole recipe, but I find these taquitos are delicious with just half the seasoning.  The cheese can be just about whatever you have on hand.  I recommend cheddar, Monterey Jack (what I used below!), colby, or a blend.

Warm the corn tortillas as directed on the package. One method with which I have had success is to heat 3 tortillas wrapped in a damp paper towel in the microwave for about 20 to 25 seconds.  If you don’t heat them enough, the tortillas will crack when you try to roll them up… Trust me, I know how frustrating they can be sometimes!

Spread about 1 to 1 1/2 tablespoons refried beans down the center third of a tortilla, top with about 1 to 2 tablespoons ground beef, and a sprinkle of cheese.

Roll up and place seam side down on one of two large cookie sheets or two 12″x17″ jelly roll pans.  Try to leave some space around the taquitos so they will brown evenly.  Repeat with remaining tortillas.

Spray them lightly with cooking spray, then bake in preheated oven until they are lightly browned and crispy.  Enjoy at once!

To freeze, bake as directed.  After taquitos have cooled, place them in a large resealable plastic bag.  You can store them in the freezer for a couple months.  To reheat, place them on a baking sheet and reheat at 400 degrees F for about 10 to 15 minutes, until heated through.
