Grease and flour a tube pan, and set aside. Preheat oven to 350 degrees F.
In a large mixing bowl, combine eggs and 2 cups sugar. Add oil, orange juice, and vanilla extract and mix well. Combine flour, baking powder, and salt. Gradually mix into egg mixture. Beat until smooth.
In a small bowl, combine 3 tablespoons sugar and cinnamon. Sprinkle over apples, and stir.
Pour half of the cake batter in the prepared pan. Arrange half of the cinnamon apples on top. Pour remaining batter over the apples, and then top with remaining apples.
Bake in preheated 350 degree F oven for 1 hour 10 minutes to 1 hour 20 minutes. Test for doneness by inserting a toothpick near the center of the cake. If the toothpick comes out clean, the cake is done.
Cool 1 hour in pan before removing to cool on a wire rack. Store tightly wrapped at room temperature.
