Orange Cashew Chicken

boneless skinless chicken breast

stalks celery
chopped

chicken broth

soy sauce

tablespoons
teriyaki sauce

mandarin oranges
undrained

cup
cashews
halves or pieces

green onion
minced
hot cooked rice
Instructions
In a large saucepan or wok, saute the chicken until cooked through, adding a little vegetable or canola oil if necessary.
Add celery and cook another minute. Reserve 4 tablespoons of juice from mandarin oranges.
Mix together chicken broth, soy sauce, teriyaki sauce, and reserved juice. Add to pan and bring to a boil. Reduce heat and simmer for about 5 minutes.
Stir in oranges and cashews. Top with green onion, and serve over rice.
