When I find bell peppers on sale, this is one of my favorite dishes in which to use them (I also highly recommend Sausage, Pepper, & Onion Pizza, too!)  The ingredients cook in a tomato-based sauce that’s accented with a bottle of your favorite beer!  If you don’t have beer on hand, feel free to substitute either beef or chicken stock.  The results will be just as tasty.

Start by slicing up your peppers and onions, and mincing the garlic.  There is something about slicing vegetables that I love.  I don’t know if it’s the bright colors or the crunch (or something else completely!) but it’s something that I enjoy.  The little things in life…

Cook the sausages over medium heat until almost cooked through.

Drain most of the grease from the pan.  Deglaze the pan with 1/2 of the beer, scraping at the bottom to loosen the tasty browned bits.

Add the peppers, onion, and garlic and cook until they become tender.

While the vegetables are cooking, slice the sausages if you would like.  I find that it makes them much easier to eat.  Add the sausage back to the pan, along with the tomato paste, basil, and oregano.

Pour in the last of the beer.  Simmer for 20 minutes, uncovered, until the sauce thickens.

Serve immediately on split hoagie buns or with hot cooked pasta!

  • 1 pound Italian sausage links sweet, mild, or spicy
  • 2 bell peppers green, red, yellow, or orange, sliced
  • 1 small onion sliced
  • 2 cloves of garlic minced
  • 1 12 oz beer at room temperature
  • 1/3 cup tomato paste
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • split hoagie buns or hot cooked pasta (optional)

Instructions

  • While the vegetables are cooking, slice the sausages (if desired). Add the sausage back to the pan, along with the tomato paste, basil, and oregano. Pour in remaining beer.
  • Simmer for 20 minutes, uncovered, until the sauce thickens. Serve immediately.
